Exclusively by hand in small boxes, with specialised and skilled labor.

Winemaking

Soft and quick pressing of the grapes, gently pressed but not destemmed. Fermentation at 15 – 18 °C in stainless steel containers and maturation on lees for 7 months with frequent battonage during the first aging phase. Subsequent bottle aging until the wine reaches its aromatic complexity.

Over 5 years.
